Chocolate Chip Cookies

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 heaping tsp baking soda
  • 2 large eggs
  • 1 1/2 tsp pure vanilla extract
  • 1/2 tsp salt
  • 1 stick unsalted butter (8 tbsp) room temp
  • 2 cups packed light brown sugar
  • 1 1/2 cup chocolate chips (or more if you desire)

Instructions

  1. Preheat the oven to 350 degrees. 
  2. Line a baking sheet with parchment paper. 
  3. In a medium bowl, whisk together the flour, baking soda and salt and set aside.
  4. In a stand mixer (or a large bowl with a handheld electric mixer), beat the butter and sugar on medium-high speed until light and fluffy (2-3 min).
  5. Add the eggs and beat until blended.
  6. Add the vanilla and beat until blended.
  7. With the mixer off, add the dry ingredients to the wet ingredients.
  8. Mix on medium just until the flour is mixed in, then turn the mixer to high speed for a few seconds to pull the dough together (it will be chunky).
  9. Add the chocolate chips and beat on high for about 5 seconds to thoroughly and quickly mix them in.
  10. Drop by large spoonfuls on the lined baking sheet (don’t flatten them).
  11. Bake until lightly browned on top (12-15 min).
  12. Cool on the pan on a rack for 1 minute, then transfer the cookies to the rack to cool completely.
  13. Repeat with remaining dough (makes about 2 dozen cookies).
